Crockpot Pork Tacos on Lettuce

Ingredients:

• 4lbs of pork chops or loin
• 1 Tbsp olive oil
• 1 cup unsalted chicken bone broth
• 1 14.5oz can diced tomatoes - unsalted
• 1 6 oz can tomato paste - unsalted
• 1 lime – zest + juice
• 1 Tbsp Apple Cider Vinegar
• 1 Tbsp chili powder
• 1 tsp cayenne
• 1 head Butter or Romaine lettuce

• onion

Directions:

1. Heat a large pan over medium-high heat and add olive oil.
2. Sear pork chops in oil about 3-4 minutes per side.
3. Place pork chops in the bottom of Crockpot and add all other ingredients except lettuce.
4. Cook for 8 hours on low, pull the pork apart, and scoop into sturdy lettuce pieces.
